This one is all about how you sell it ……….
Part of my training includes a Masters of Science in Food Product Design – to this end when I design and create recipes my number one priority is always to make sure the children love it and will eat it all. It takes time and effort to cook from scratch and there is nothing more soul destroying as a Mom or Dad after going to all that effort to cook afab meal for it to be pushed away !
So I employ many techniques and strategies and today this recipe includes two of those : umami and a little psychology !
This dish is oozing with umami flavour from the crumb – the aged parmesan cheese and cured chorizo are two foods loaded with natural umami as well as the delicious sun-dried tomato pesto. These combined with the mild, palatable and delicious flavours of chicken & mozzarella makes for an amazingly delicious dinner.
Now for the psychology!!! To you and me this is a dish worthy of a fab bistro on a Friday night with a gorgeous glass of chilled sauvignon blanc – for this kids this is Pizza Chicken !!!
I am not saying you need to this for all children but some kids are slightly more fussy and picky than others. The challenge can be in just getting them to try it.
So, this is why we can call it Pizza Chicken for them. Why you ask ? Well, think about it – it has all the same components as their much loved pepperoni pizza – the crumb is like the base, the sun-dried tomato pesto is like the tomato sauce, the mozzarella in the middle and the chorizo in the crumb. It even has a sprinkling of mixed Italian herbs for that authentic vibe.

What You'll Need
Feeds 6 ( 2 adults & 4 kids )
4 chicken fillets ( 500g )
125g ball of fresh mozzarella
4/6 tsp sun-dried tomato pesto
Optional : 3 tsp garlic butter
1/2 tsp Italian herbs
75g tuc crackers
75g parmesan cheese
Oven proof dish
How to Do It
- 1To make the crumb - blitz up the crackers, chorizo and parmesan. Add in the Italian seasoning.
- 2To prepare the chicken, pop it on a chopping board. Cut the chicken open lengthways. Flatten out between 2 sheets clingfilm or parchment paper.
- 3Cut the mozzarella into 6 slices.
- 4Spread a tsp of the pesto on the inside of chicken fillet. Place in the mozzarella.
Roll up and place in the oven proof baking dish.
- 5Sprinkle the crumb on top, dot with butter and pop in some cherry tomatoes on the side.
Bake in a preheated oven at 180ºc for 20mins.
Serve with creamy mash and buttered corn.
