What You'll Need
185g / 6oz self-raising flour
1 teaspoon baking powder
2 tablespoons caster sugar
2 large eggs
250ml/ 8 floz milk
60g / 2oz butter – melted
3 tablespoons sunflower oil for cooking
How to Do It
- 1 Sift the flour, baking powder and sugar together. Make a well in the middle
- 2Crack the eggs into a bowl and lightly beat. Then add in the milk and melted butter and whisk together.
- 3Pour the wet ingredients into the well all at once and whisk to form a smooth batter. Cover the batter with cling film and leave to rest for 5 minutes.
- 4Dip a piece of kitchen paper into the oil and wipe it all over the frying pan. Heat the pan on a medium heat. Put two tablespoons of mixture into the pan and gently swirl to create a pancake of about 8cm in diameter. Cook for 1 minute until small bubbles form and underneath is golden brown.
Serve the pancakes with maple syrup drizzled on top.
